They got rid of that a few years ago.
Edit: You can defer it until you open the game/software.

2. Only update this game when I launch it
3. High Priority - Always auto-update this game before others.

"Only update this game when I launch it" - Since this option will stop the app from being updated and consuming download limits if you never play it I can only assume you want an option to stick with a specific version of the game?

edit: I have to eat crow. I tried to block updates in a steam game and didn't see any options to do so.
I can't be certain, since I don't do mods much, if at all, but I think you can work around this by going into offline mode prior to launching the game in question.Yes, that's pretty much it. Updates keep breaking my mods. Having the game try to update right as you're trying to play it is pretty annoying as well, especially when the updates were just for new in-game stuff you can buy rather than a reliability patch or fixing bugs.
But if you launch the game while online and there's an update, you're pretty much stuck with it.
