Scott Manely has a short on youtube talking about the center of gravity question - the short answer is the propellant and oxidizer are stacked so that as they drain the mass is still centered. other options are to double the tanks to spread and lower the weight.

some of this stuff also might be endocrine disruptors which isn't a fun conversation to broach...
